This exciting lot of carbonic macerated mundo novo comes to us from producer Luiza Macedo in Sul de Minas, Brazil. Luiza is an Agricultural Engineer who graduated from ESALQ-USP and holds a master's and a doctorate from IAC (Agronomic Institute of Campinas) in plant nutrition and physiology, specializing in coffee cultivation. Similar to the wine industry, carbonic maceration involves fermenting whole coffee cherries in an oxygen-free environment, which results in more pronounced fruit-notes.
