This unique lot comes from producer Katia Duke of San Isidro farm in Copán, Honduras. Katia's family has been farming coffee for generations, however, it was only following the leaf rust epidemic that hit Honduras in 2012, in which the majority of the farm's yield was lost, that the family transitioned to specialty coffee with Katia leading the way. This exciting lot underwent a "mossto" fermentation in which the culture from a separate anaerobically fermented lot was used to fuel the fermentation of this washed lot for 18-24 hours before being washed with fresh spring water. The result is deeply sweet, full bodied, and clean.
